Fluffy Pancakes

What you need:
-Pancake Mix, Sugar, Salt, Vanilla , Powdered Sugar
-Carton of eggs
-Marscapone
-Lemons, Orange, Berries (Choice)
-Maple Syrup
-Optional: Basil, Vodka, Grapefruit, Rosemary, Soda Water

Pancake Mix #cheatcode : 1 1/2 Cup
Egg Whites: 8
Egg Yolks: 3
Sugar: ½ Cup
Milk: 1 Cup
Salt: 1/2 Tsp
Vanilla: 1/2 Tsp
Filling
Mascarpone: 1/2 Cup
Lemon Zest/Juice: 1/4 Cup
Sugar: 2-3 Tsb
Salt: 1 Tsp
Vanilla: 1/2 Tsp
Fancier Maple Syrup
Your choice of Maple Syrup
Orange Zest
Splash Orange Juice
Vanilla: 1/2 Tsp
Berries
Raspberries
Blueberries
Strawberries
..Choice is yours
Garnish
Basil
Powdered Sugar
What to do:
1. Mise en Place. Measure and prep your ingredients.
2. Mix egg YOLKS, sugar, milk, and pancake mix in a bowl until smooth.
3. This is how you get them fluffy! In a separate bowl beat egg WHITES with a mixer, until stiff peaks form.
4. Fold the egg white into the pancake mixture. Slowly so you don't deflate the batter.
5. Spray your ring molds with any cooking spray. Heat up your nonstick pan, add butter.
6. Add molds to pan, fill the molds 3/4's of the way. Cover pan and cook 10 mins on low heat until pancakes are slightly jiggly.
*Be Patient, and keep the heat low.
7. While cooking, make the marscapone filling. Mix marscapone, sugar, lemon juice/zest, and salt until creamy.
8. Mix maple syrup with orange juice, zest, and vanilla.
9. Carefully flip over and cook for 5 more mins.
10. Cross your fingers and release from the molds.
11. Top with berries, powdered sugar, and maple syrup. Add filling between pancakes, on the side, or BOTH.
12. Enjoy!

DISCLAIMER:
If you don't have ring molds or are struggling, make as regular pancakes or use the outside of mason jar covers as a mold. They will still taste delicious, just a bit short.

2 oz Belvedere
2 oz Grapefruit Juice
Splash Lemon Juice
Top with soda water
*Garnish with Rosemary and Grapefruit slice
